• During the month of December, I felt so good giving up gluten on this journey towards Carnivore. In the mornings, I was waking up without pain, and with a better overall mental state. I had the holidays to look forward to, and I was packing for my move back to my hometown. Eating steak was a joy!

Then came January and the move. Days before the move, I was filled with anxiety. “Do I really want to do this, even though I know my company would be good for my mother?” “What if we can’t coexist well? How long will this part of my journey last? What if? What if? What if?” The negative thoughts and emotions were just flooding me. So instead of giving up sugar, I kept the sugar.

February saw me with a flu and maybe even oxalate dumping. I had given up most vegetables and all fruit. I was eating my 1 carnivore meal a day, along with a carb+meat meal as my 2nd meal. Then I suffered from dehydration or low electrolytes, and needed to up my salt intake. My mindset was just down, down, down, during this time also. I was eating gluten and sugar during this time, and I felt like junk, the same as pre-December.

The addition of gluten in February resulted in zero fun. The taste was good temporarily, but even then, I had gluten that tasted like nothingness. It fed the addiction, but what was the point? All I did was mess around, and find out it wasn’t fun or worth it. I feel exactly the same lethargy, blah, meh, that I did before finding out about Carnivore meals. Gluten really is my foe, and not a friend.

Having tested multiple carnivore, meat-dense meals over the past 3 months, I can attest that I feel great eating meat-based. The processed foods don’t leave me satisfied, and they seem to trigger my “need to feed” where I just mindlessly overeat. My overstuffing and overeating increased when I ate gluten and sugary treats. All for a temporary food addiction fix.

But tomorrow is March 1st. Instead of taking one more month to ease in by really giving up sugar and gluten, I’m just finally going to start. I am sick and tired of being sick and tired. I want vibracy, clear-headedness and energy coursing through my veins. I want to give up my addiction to processed foods, gluten and sugar. I want to eat clean, simple, animal-based meals that leave me feeling satisfied and energetic. I want to wake up each day thankful for another day of life!

So I give my gratitude to the Lord for leading me to Carnivore, and I know He will be with me on this journey. I’m so grateful for you too. Jesus loves you.

  • “Why not just jump into Carnivore?”

Normally, I’d agree. Why wait? But testimony after testimony confirm that suddenly changing your diet to Carnivore can cause some unfortunate issues. Some of the issues:

    1. Oxalate dumping – The body ridding itself rapidly of stored oxalates, found in some fruits, nuts, beans and veggies.
    2. Problems on the backend – constipation or diarrhea
    3. Withdrawals from sugar and/or gluten (wheat)

The issue I’m most concerned about is addiction withdrawal from sugar, and maybe gluten. Just looking around in every restaurant, every commercial, in our cabinets or grocery aisles, the most common ingredients in many recipes are sugars and wheat. I’ve even found wheat in Mint Chocolate Chip ice cream. WHY is there WHEAT in my ice cream????

For the month of December, I gave up gluten. I had my last gluten item on Dec. 5th, and the meal was predictably my all-time favorite….pizza. Pizza has been a lifelong love, but for Carnivore, I say goodbye to wheat crusts. See this video from Steak and Butter Gal for a Carnivore pizza recipe:

    Update – What actually happened?

    • From January to February, I’ve been eating gluten and sugar. I did NOT observe the weaning off of these items at all. I allowed all of it, but not every day and not both daily.
    • Does that mean I’m not following through on the Carnivore diet? This means absolutely nothing…. I will officially start the Carnivore diet on March 1st.
    • March 1st – Follow along for my daily meals, and any struggles or successes that I experience! I’m very excited to see what happens.

Just a reminder: God is one prayer away, and He is not far from us when we call out to Him. If you are struggling with anything, from mindset to health to finances, please call out to God for His wisdom. God is good to those who love Him and follows His ways.

  • Wow….I am really glad I found this video before I took a break these last 2 months. Let’s just say that the past months have been a battle with my mindset.

In January, I moved back to my hometown to be with my mother, and my mindset was that of dread. I saw positives to help my mother and keep her company. But I also imagined negatives that affected my overall wellbeing and outlook.

February was all about my mindset on the future and my work. Again, my mindset was not framed positively, and again my overall wellbeing suffered. I came down with a flu or oxalate dumping, or both, which did not help with how I was feeling. I was down phystically and mentally for two weeks, just feeling like absolute garbage. It’s no fun in the gutter.

But thankfully God leads us to answers when we are seeking, and even when we aren’t. Watching YouTube, a man reminded me not to go back to Egypt, and to stay the course. The account of the Israelite journey out of Egypt, into the wilderness, before the Promised Land is a great read in Exodus. Why? Because we are all dealing with our own version of Egypt, the wandering in the desert and the promise land (if we obey and trust in God’s direction).

I’m currently in the desert of this story, and have been for the past couple years. Believe me, I don’t want to be in the desert for 40 years like the Israelites. And I especially don’t want to miss out on the Promised Land like a majority of those Israelites did. I don’t want my unbelief, distrust, yearning for the old ways (which aren’t God’s ways), to be the reason I miss out on the Promised Land in my life.

So what does this mean for my journey?

    • March 1st – I will gladly follow the Carnivore diet for 90 days minimum, and report my progress here.
    • I want to enjoy the work I do currently, while building towards a new business.
    • My business goal is written where I can read it, and it presents what I want to build. Within that goal is a smaller 1st goal that I will pursue. The bigger target is also within mind.
    • I will trust in God and believe in His best for my life, and I gladly follow Him and His direction.

I hope this is a timely reminder for you as well, and thank you so much for reading along during my journey. May God bless your faith and trust in Him always.

  • Week in review: During this transition into the Carnivore way of eating, I’m already seeing interesting improvements. I no longer labor over my grocery list, attempting to vary up my meals each day. This way of eating is so much simpler, and I’m not looking at the weekly specials thinking “Oooohhh, what can I treat myself to??” The cravings and food noise are significantly less since adopting this way of eating, even with just 1 of my meals Carnivore a day.

Since my grocery list is very short, my time at the grocery store is quick and easy. Most of my walk is on the perimeter, except for household items like cleaning products. It’s an added bonus for adopting Carnivore.

The weekly specials at the grocery store:

    • Uncured, no sugar bacon $5.59 at Aldi (a savings from regular grocery stores)
    • $6.49/lb ground lamb
    • $5.99/lb grass fed ground beef (also a savings from regular grocery stores)

Sunday – Top sirloin steak cooked in butter

Monday – BBBE (Ground Beef+Butter+Bacon+Eggs) bowl……frozen from last week; did great reheating in the oven

Tuesday – Pulled pork with 2 oz. cheese and pork rinds

Weds – Skirt steak cooked in butter

Thurs – Homemade ground beef and lamb burgers, with 2 servings gorgonzola and feta cheese crumbles

Friday – Chicken bites with bacon, cooked in butter

Saturday – Steak cooked in butter, eggs cooked in bacon grease (eggs batch cooked earlier this week)

Coming up: This next week encompasses my favorite holiday, Christ in Christmas, and my birthday. Since I am just beginning Carnivore, I will be very interested to note how those two events affect my cravings. I would like to enjoy a carnivore meal on my birthday, but I haven’t yet decided if I’ll eat carnivore during our Christmas family potluck. Just a reminder, I’m only eating 1 carnivore meal a day during this transition time. Either way, I’ll report back!

May your heart be merry and bright as you finish your holiday preparations! God bless you.

  • Ever since I realized my body was starting to reject gluten/wheat products, I’ve been upset (which is an understatement). After 30+ years, my body betrayed me. I had been eating pasta, pizza and baked goods all my life. So you better believe I was praying to God to ask Him to heal my gluten intolerance. Believing in faith that the gluten intolerance would miraculously heal. Believing that when I went on a trip to Israel, the wheat products there wouldn’t bother me. Well……that miracle didn’t happen.

God knows the struggles I’ve had with food and my weight since I was a toddler. God knows I could eat 3 fast food meals in 1 day, and still feel hungry. God knows that I could eat an entire half gallon of ice cream in 1 night. He knows that eating a large pizza by myself was normal for me.

As weird as it may sound, I believe gluten intolerance was the first step to me figuring out my weight issues. Gluten and sugar are so addictive to me that I just keep eating. I eat, but then I’m hungry for more under 2 hours later. Being completely satisfied on real food, without snacking or “needing” dessert, was rare for me.

One night I was praying to God in absolute frustration with myself, my weight, my lack of control with food, my lack of energy and my depression. “God, I’m just so angry at myself. I wish I could figure this out. I’m so tired of being sad, of being depressed, and just wanting to keep eating. I hate that I have no discipline with anything. I just want to do good in Your eyes, to have the energy to do good things that honor You. I don’t know what to do to fix any of this. God, help me figure this out.”

Then God answered my prayer differently than I expected. One night on YouTube, a video by Kerry at HomesteadHow was suggested, probably because I had recently been searching about high protein eating. I ignored this video at first, because I didn’t want to watch anything about homesteading. I was trying to figure out my weight and energy issues, and not thinking about my future dream of a homestead.

But I finally read the title, and watched the video. The first time I ever heard about Carnivore eating was during this video. And so my research began. I watched video after video, all the while trying out high protein meals. Eating these meals helped me realize how much more satisfied I was afterwards, and how much longer I stayed pleasantly full without cravings after meals. Every “carnivore” meal since has confirmed how much this way of eating satisfies my hunger for a longer period of time. Carb-loaded meals never made me feel this way!

So has God answered my prayer of how to eat and feel satisfied? And does Carnivore require giving up gluten and sugar to feel that satisfaction? I believe the answer is “YES” to both. Right now that freedom from intense hunger and cravings, with minimized hair loss, improved energy and mood…..all of this feels like answered prayer. Is Carnivore my forever answer? I don’t know, but it is the answer for now. I plan to give Carnivore a minimum of 1 year to see what improvements I experience. Currently, I have no desire to try anything but Carnivore eating!

I thank God that He answers prayers in the best ways for us, not in the ways we think is best. God knows everything. He knows what we want, but He knows better. With this, I just offer my thanks and praise to my loving Father in Heaven. He loved me before I knew His name, and He’s been wanting me to choose Him and to love Him my whole life. God, I am so grateful for this unexpected answer, and I trust in You with my life. May God bless you, dear reader, with an answered prayer of your own, even it’s different.

Just in case you haven’t seen his YouTube channel yet, here’s a video by Kerry at Homestead How:

Week in review: Because I believe in the ability of Carnivore to improve my health, being surrounded by junk food at the grocery store didn’t bother me. I walked by all the junk food specials; no cravings drawing me, no feeling of deprivation or restriction. I’m already seeing improvements by removing gluten from my diet this month. See my separate post about my history with gluten, for those who also suffer from gluten intolerance.

This past weekend was also my first time traveling while trying to maintain 1 carnivore meal a day + gluten-free eating. The experience was interesting, and I’m having some thoughts about how to make it easier or more affordable to eat while traveling. I have more to ponder, to prepare and to research! Will blog about this soon.

I pray that God bless you and keep you. Have a wonderful week as we get closer to Christmas!

  • Pizza, sandwich bread, bagels, English muffins, pastries, bread bowls, pasta, crackers, sweet muffins, pie, cookies, cakes, and did I mention pizza, pizza, pizza???

Regularly I would indulge in all these gluten/wheat-filled delights. Eating an entire 12″ pizza was not unusual for me. Same with eating an entire box of pasta. Just a normal meal for me until 2018. So what happened that year?

Going through a break-up, I was super emotional, even more so than expected. I kept sleeping long hours, crying, had digestive issues, increased hair loss during showers. Seriously, I thought I was sinking into depression over this ended relationship. Somehow the issue of Celiac disease and gluten intolerance came up, probably in a documentary I watched on Netflix.

I remember a woman saying she was paralyzed, and couldn’t move for years, until she removed gluten from her diet. Totally crazy, right?? The documentary interviewed other people with wheat issues, and the side effects ranged from depression to body pain to IBS (irritable bowel syndrome). After months of being emotional, increasing stomach issues, more hair loss and waking up feeling way older than 35, I looked into gluten intolerance. My symptoms fit.

At a doctor’s visit, I brought up my issues, and discussed if I might have an intolerance. Based on a blood test, I wasn’t “intolerant” of gluten. This is common even for someone who actually is gluten intolerant. So I would have to do a biopsy of my intestines to know for certain. I said No to that. For the depression, my doctor suggested medication. I refused, and said I would try removing gluten from my diet instead, and would let her know the results later.

Here is a list of all the symptoms I experience with gluten:

    Depression

    More emotional swings

    Stomach issues/flatulence

    Increased hair loss

    Dandruff

    Body aches even after sleeping

    Inflammation

Water retention in my feet and ankles

Increased sleepiness (tied to the depression)

    Neuropathy/numbness in my hands

    Itchy hands

Bubbles under my skin (hands only)

Once I noted all my symptoms from eating gluten (confirmed after I removed gluten in 2018), I realized some of these symptoms actually started a couple years prior. The two symptoms I experiences before were the bubbles under my skin and the flatulence from gluten. Feeling relief from all the symptoms was so needed!

But why am I cutting out gluten this December if I had removed gluten from my diet already? Well……..I let gluten creep back into my diet, one slice of bread at a time. I was back up to 5 servings of gluten on some days. And it caused depression and higher emotions all over again. My rational was to test if 1 piece of pizza or bread would bother me. After 18 months without steady gluten, the one piece didn’t seem to bother me. So more and more gluten creeped back into my diet.

Fast forward to December 2025, and my symptoms from gluten have been similar again. The emotional swings haven’t been as severe, but the tiredness and mild depression have been far too noticeable. And that picture of bubbles under my skin was taken this December. Gluten needed to be removed from my diet AGAIN, regardless of the Carnivore diet. Carnivore was just the impetus.

Since removing gluten on December 5th, a week ago, I’ve already noticed less hair loss and a slight improvement to my energy levels, as well as a reduction in my flatulence. I would love to see even more improvement in my energy levels with Carnivore, but I will report back as I progress!

Thank you for following along with my journey! May God bless your coming and going!!

  • “Why not just jump into Carnivore?”

Normally, I’d agree. Why wait? But testimony after testimony confirm that suddenly changing your diet to Carnivore can cause some unfortunate issues. Some of the issues:

    1. Oxalate dumping – The body ridding itself rapidly of stored oxalates, found in some fruits, beans and veggies.

Just looking around in every restaurant, every commercial, in our cabinets or grocery aisles, the most common ingredients in many recipes are sugars and wheat. I’ve even found wheat in Mint Chocolate Chip ice cream. WHY is there wheat in my mint chocolate chip????

So, here’s the plan. For the month of December, I have up gluten. I had my last gluten item as of the 5th, and the meal was predictably my all-time favorite….pizza. Pizza has been a lifelong love, but for Carnivore, I say goodbye to wheat crusts. See this video from Steak and Butter Gal for a Carnivore pizza recipe:

During this entire transition, I’ll be including at least one Carnivore meal a day where possible. I am challenging myself with eating Carnivore even on the road during the holidays. Thankfully videos are abundant on YouTube to help give me ideas for most chain or fast-food restaurants.

Here’s to a Happy Holiday of transitions. May God bless your path and your heart this month.

  • During my transition into the Carnivore lifestyle, I decided to blog my weekly meals that classify as Carnivore. My spices aren’t perfect yet; Carnivore purists would say “Salt Only”. Use this as inspiration, or for meal planning on your own journey. In an effort to save money, I’ll be shopping with the weekly grocery store sales, and I’ll vary my protein sources. This week was post-Thanksgiving holiday, so I didn’t visit the grocery store until Tuesday.

The weekly specials at the grocery store:

    • $7.99/lb whole top sirloin, cut as desired
    • Buy 1, Get 1 Free eggs

Sunday – SAD (Standard American Diet) garbage meals

    Monday – SAD garbage meals

Tuesday – Sirloin beef stew bites, cooked in butter

Weds – Uncured bacon and eggs, cooked in bacon grease

Thurs – Top sirloin, cooked in butter; topped with 133 calories of gorgonzola cheese.

Friday – Eggs cooked in butter, with uncured turkey bacon (**Won’t eat this bacon on Carnivore, since sugar is an ingredient.)

Saturday – Top sirloin, cooked in butter

Looking back: While these meals seem simple and repeated on multiple days, I felt satiated where cravings weren’t pestering me all day. No ingredients were wasted. Because I waited to eat until I was truly hungry, every meal tasted great. Simplicity, flavor and no food-waste are all wins in my eyes.

Have a great week, and may God bless you and keep you.

  • Let’s create an exhaustive list of all the different diets that have been created over our lifetime.

    Low Fat

    High Protein-Low Carb

    Whole 30

    Carnivore

    Atkins

    Keto

    Vegetarian

    Vegan

    Mediterranean

    Sugar-Free/Low Glycemic

    All Exclusion diets

    Paleo

Crash diets like Cabbage Soup diet

    Intermittent Fasting

There’s variations that I’ve missed, but suffice to say, there’s a plethora of options for food or diet plans to follow. But why have I chosen the Carnivore style of eating for this time in my life?

    1. Testimonies – Carnivores report improvements from reduced snoring to dramatic reduction in tumors or the elimination of major health concerns. Is any of this a guarantee? No, but I’m willing to catalogue my list of health issues, and then journal if I see any improvements.
    2. Diet simplicity – Carnivore is essentially an elimination diet. High inflammatory foods like gluten are removed, so health improvements can be a result.
    3. Removal of highly processed foods like refined sugars, factory-made substitutes, junk food and excessive filler ingredients (like soy protein).
    4. Satiety = I may finally feel satisfied from and between meals, without feeling hunger two hours later as I have with carbs. Carnivores have reported the reduction of “food noise” or cravings for junk food while eating this way. This would be a massive win for me!

Some cons to consider based on all my research:

    1. This is a lifestyle choice. Adding in junk food like carbs or sugar will bring back all the old cravings and old health issues with them. If I find success on this food plan, Carnivore will need to be my only way of eating. “Cheating” causes immediate bodily reactions like stomach issues and joint pain, based on others’ results. While there are certain veggies or fruit that I enjoy, I’m not planning to reintroduce them anytime soon.
    2. Must plan for trips – On the road, I’ll need to pack my go-to snacks, seek the carnivore snacks in gas stations, and know my best restaurant meal options. Luckily, other Carnivores have made videos about this topic, noting that hard-boiled eggs, cheese, sugar-free jerky and hamburger patties are available most places. See this video from Laura Spath about Carnivore on the road:

What happens if I try Carnivore and can’t stand it? I’ll be going to the Whole 30 style of eating. Same elimination of trigger foods like simple carbs and sugar. My main goal is to remove highly processed foods, processed oils and long-ingredient-list junk foods from my diet.

I really appreciate you following along on my journey, and pray that your health journey is a success also! May God bless you and keep you.
