• The creativity of breakfast is really great…so my mother. (laughing) I’ve been playing around with the egg and meat options for her every meal. Today I served poached eggs on Canadian bacon with cheddar cheese. The closest to a Hollandaise egg I’ll attempt right now. My breakfast was a variation on her breakfast because I don’t care for runny eggs.

    Meal 1 – 2 servings Canadian bacon + 1/2 cup Cheddar cheese + 4 eggs scrambled

    Snack – Korean jerkey

    Meal 2 – 6 oz Carnitas pork + 2 slices of pizza + Coke Zero

    Snack – 2 servings string cheese

    Cravings: Literally none until someone else was in charge of dinner, and there wasn’t enough food for me to readily eat. Then I thought “Well, I was wanting pizza, and I didn’t have it the other day” before running an errand. This is a moment when I wish I had a delicious Carnivore meal already prepped, that I actually wanted to eat. There was pork loin leftover, but I avoided eating it because pork and chicken always seem dry after refrigeration.

    Energy: Slept well, and my dog woke me up early. Mood was a little blah later in the day, which might be the gluten talking. So I should expect to have the same gluten reaction in a couple days. Time will tell.

    After the recent non-carnivore bites, I probably need to pray about my mindset about food. God knows all the crazy I have been through, and He knows I don’t want to remain addicted to food my entire life.

  • Thankfully it’s a new day, and we get to try again! What sounds better than steak for breakfast?

    Meal 1 – NY Strip 1.1 pound

    Snack – Coke Zero + Korean jerky + 1 string cheese

    Meal 2 – 1/2 lb burger + 1 slice cheese + 2 Costco quarter-pound hotdogs

    Snack – Korean jerky

    Cravings: When I needed a snack, the junk food seemed appetizing. So I ate the jerky to ward off the craving.

    Energy: Slept well, and woke up early.

    Today was a treat beginning with steak. When I was younger, steak was never on our plates because of the family budget. I’m grateful to experience steak. Love You, Lord!

  • Weighed myself this morning, and the scale says I haven’t gained back 2 pounds. Oh well, I’m going to trust the process, and just stay on Carnivore.

    (Later today) Strategy change: I ate the garbage I was craving. This was risky for a couple reasons.

    1. Eating the carbs, gluten or sugar may cause me to lose all desire to get back on Carnivore.
    2. Unexpected effects to my physical or mental state.

    Why did I attempt to eat the junk, processed food that I had started to crave? Because Carnivore meals still sound appetizing to me. I think about all the Carnivore meals I’ve cooked, and I want to eat them still. I’ve been able to go to restaurants, look at the other items, and resist them in favor of my Carnivore foods. I wasn’t too worried about my desire to go back on Carnivore. Also, I didn’t want to “store up” thoughts of all the foods I was craving to the point where I’d just eat all junk food in 1 day or on a road trip.

    Snack – Korean jerky

    Meal 1 – Empanadas 4 beef/cheese (made with corn dough) + Coke Zero

    Snack – unsweet tea + pretzel

    Meal 2 – Brunch Burger Extreme (1/2 lb burger, 8oz bacon, 1 slice cheese, 3 eggs)

    Cravings: My mental state let the junk-food desires run, so I just decided to eat the junk.

    Energy: Woke up the same way I felt last night, which was feeling a bit blah and defeated. The sleep itself was great, and I got puppy kisses this morning. The sun is shining, so I am glad for it.

    The fact that God gave us free will is a great gift. But also a great responsibility. Onward towards tomorrow!

  • Weight gain….on Carnivore, and it’s only been 3 weeks.

    Weight: 282 pounds

    • This week + 2.1 pounds
    • Total -11.2 pounds
    • Starting weight 293.2

    Looking back at this week, there are multiple likely suspects for the weight gain:

    • Overeating
    • Sugar-free sweeteners
    • Lots of dairy
    • Lack of exercise
    • No calorie-tracking

    For weeks 1 and 2, my daily calories were around 1,000 calorie meals x 2, plus a snack around 200 calories. However, on week 3, I exceeded those calories at least 3 or 4 times this week. So here’s what I’m going to change for week 4:

    1. Bringing my meals back to 1,000 calories a meal x 2 daily, with a 200-calorie snack.
    2. Gardening for 30 minutes a day x 4 times this week (or more since I have a garden project).

    I’m not cutting out the fake sweeteners or dairy yet, but those will be areas to refine in future.

    Meal 1 – Steak bites 1 pound

    Snack – McDonald’s iced coffee (had sugar in it b/c I forgot to specify no sweetener) + Korean jerky

    Meal 2 – Pork loin 1 lb + 1 tbsp creamy cilantro dressing

    Snack – 2 servings string cheese

    Today was completely off beyond the meat I ate. Snacks were a disaster.

    Cravings: Sugar, carbs, everything bad. I was having a reaction to “failing” this past week, and stressing over a situation with a neighbor. Since I already ate off Carnivore so many times today, I didn’t ruin it further by getting other garbage to eat.

    Energy: Slept well.

    Exercise: 30 minutes raking leaves, gathering yard waste and dog washing

    Today’s sermon reminded me of my father, with a reference my mother made during his memorial. During the Sermon on the Mount, Jesus said the wide gate leads to a broad road, but that road leads to destruction. The Frank Sinatra song “I Did It My Way” was referenced. My father didn’t like that song, because he wanted to do everything God’s way. Tears came to my eyes, but I also felt such gratitude for the Christian walk my father modeled for me. I am so grateful to my Father for my father.

    This idea of the broad road can be applied to the Standard American Diet (SAD), with the narrow road being Carnivore or any other elimination diet. Lots to think about, but now I’m off to bed.

  • Alfredo Chicken – Makes 2 generous servings.

    • 2 pounds chicken breast
    • 3 tbsp butter
    • 3 oz Parmesan cheese, cut from block into cubes or shred
    • 1 cup Greek Yogurt (low sugar)
    • 1/3 cup cream cheese
    • 1/4 cup water
    • Garlic powder, salt and black pepper to taste
    1. Cut up chicken to cubes, about 1″ or smaller.
    2. Heat pan, and add 3 tbsp butter. (This amount of butter needed for chicken breast which has low fat content.)
    3. Cook chicken to desired level on all sides. Leave some liquid in the pan, about 1/2 cup.
    4. Add in parmesan cheese to begin melting, and mix in gently.
    5. Turn flame down to low before mixing in the other ingredients.
    6. Add in cream cheese and Greek yogurt. Add water until sauce is desired consistency. Stir until well incorporated.
    7. Add salt, pepper and garlic powder to desired flavor.
    8. Mix well, and enjoy.

    Pork Belly

    This video gave me the times and temperature to cook the pork belly. I did not do the overnight salt, and I also used different spices. My pork belly didn’t have the crispy top, because I’m using skinless pork belly. If you want the crispy top, buy pork belly with the skin still attached.

  • So much pork eaten today. Anyone with a Hispanic or Asian background will understand how infused pork is to our cuisine. If my Filipina mother was told she couldn’t eat pork anymore, I think she would freak out. So I’m keeping pork in our diet.

    Meal 1 – Omelet with 5 scrambled eggs, 1/4 cup cheese and 1/4 cup real bacon bits

    Snack – 1 serving cheese & 1 serving Korean pork jerky & large Coke Zero

    This Korean jerky has sugar in it, which is totally against Carnivore rules. I let it slide. I figure that this jerky is a better option than gluten, refined carbs or desserts. Thankfully this jerky is now offered in 1.5 oz snack packs, because I used to eat an entire 5 ounces in a sitting.

    Meal 2 – 1 lb pork belly

    Normally I wouldn’t eat pork belly by itself, because it seem so fatty to me. However, I decided to try eating just pork belly to see how satisfied and full I felt. The piece I had was full of meat, with a thin layer of fat on top. About 1/4 cup of lard drained from the air fryer after my piece was complete. So yummy!

    Cravings: When I see carbs or desserts, they look good right now. Not to the severity that I can’t resist, but I did have thoughts of cheating by eating a pastry. But I then reminded myself that I was in the grocery store without my snack, and a snack would have satisfied that craving.

    Energy: Felt just fine when I woke up. Today was a chill day just wrapping up my week.

    During dinner, my mother put on the movie about Ben Carson and his amazing story becoming the head of Neurosurgery for John Hopkins Hospital. God made our brains so complex and full of mystery, that I have no doubts regarding an intellegent Creator.     Do you like starting the morning with a song? My mother raised us to appreciate musical theater, singing and dancing. But a beautiful, light feeling in the morning, with a song? That’s a great way to begin any day.

    Because I woke up early easily today, I was able to get the chuck roast started sooner than normal. Ideally I’d prefer the chuck roast to cook for 24 hours, but my mother complains about the delicious smell wafting through the house in the middle of the night. So I’m going to a slow roast most of the day, and then boost to high temps the last couple hours. My mother also requested onion seasoning with our normal salt and pepper. Should taste delicious!

    Meal 1 – 6 oz ham + 4 scrambled eggs + 2 oz Jarlsberg cheese

    Snack – 2 serving string cheese

    Meal 2 – 2 lb chuck roast (cooked down to about 1.5 lb)

    Snack – 2 serving string cheese + large Coke Zero

    Today I ate more than the prior 2 weeks, like I’ve been eating more since this past Saturday. This Sunday’s weigh-in will reveal if the scale reflects the amount of calories I’ve eaten.

    Cravings: Nothing when I woke up, but icy Coke Zero as I was running an errand.

    Energy: I woke up so easily today, it’s a miracle! Euphorically danced to two of my favorite songs in the morning before work. I was laughing and enjoying myself so much. 🙂

    So happy for today, and happy that God gave us the ability to feel every emotion!

  • Have you ever made a dish that you want on repeat? Both meals today were exactly like that, especially the ribs. My mother actually wanted more, but we decided to wait 20 minutes to ensure we were actually full. We were, but more ribs have been requested.

    Meal 1 – 8 oz bacon + 4 scrambled eggs + 1.5 oz Jarlsberg cheese

    Snack – unsweet tea with Stevia + 1 serving meat sticks + 2 servings string cheese

    Meal 2 – Baked ribs 1.5 lbs (including bone weight)

    Baking ribs kept them so juicy, and so soft! Because they were soft, they went down way too quick! Max German, from YouTube, prefers meat with a “bite” because he stays fuller than when he eats soft meat. Next time I’ll try baking the ribs on high longer, to get more bite. I’ve included a video from Max if you’ve never seen his content.

    Cravings: None were calling me.

    Energy: Slept so deep last night, and I decided to sleep in a little bit longer.

    God is so good, and I am glad in Him.

  • Anyone who grew up eating at Denny’s will likely understand this title. Denny’s was my family’s favorite restaurant in my teens, and then my favorite during my dancing/club days in my twenties. Moons Over My Hammy breakfast sandwich was one of my favorites. All this to say…..I was craving ham.

    Meal 1 – 12 oz ham steak + 4 scrambled eggs + McDonald’s iced black coffee w/ sugar-free flavoring

    Snack – 2 servings meat sticks

    Meal 2 – Alfredo Chicken 1 pound w/ 1.5 oz Parmesan cheese (see recipe for all ingredients)

    Snack – 8 servings of pork rinds (entire bag)

    Eating an entire bag of pork rinds was too easy. And this was an old food addiction habit of stress eating. Even though eating more won’t help a situation, I’ve used overeating to cope my entire life. I definitely don’t want to continue this habit. If I only had meat sticks or cheese, I don’t think I could have physically eaten 8 servings of those foods. For my own sake, I will not keep pork rinds around (but I ate a bag that my mother had).

    Cravings: Ham was calling my name! When I was shopping at Costco the last 2 times, I saw the ham, but kept putting off the purchase. This morning after an errand, the ham was calling my name. I also forgot to buy eggs yesterday, so I picked up 5 dozen eggs.

    Energy: Last night, I passed out so quick! Slept pretty well, and woke up a bit before my alarm clock.

    This verse is inspiring me right now:

    • Mark 11:22-24 – And Jesus answered them, “Have faith in God. Truly, I say to you, whoever says to this mountain, ‘Be taken up and thrown into the sea,’ and does not doubt in his heart, but believes that what he says will come to pass, it will be done for him. Therefore I tell you, whatever you ask in prayer, believe that you have received it, and it will be yours.
