Today I was excited to try a recipe I’ve heard about, but never made: the roasted cauliflower whole head. Came out pretty tasty with butter and a lemon-herb packet. However, I wish I had more meat, and could have easily eaten another 4+ ounces. This tender roast was the Morton’s Tender Roast available at Aldi for $6.99/lb. Definitely worth the price.

Meal 1 – Frittata with 4 eggs + 1.7 servings chicken sausage + 1 oz Jarlsberg cheese

Snack – 2 servings string cheese + Coke Zero

Meal 2 – half Cauliflower Roast + 7 oz beef tender roast

Snack – 1 serving pork rinds + 1 meat stick

Cravings: I just needed more meat after the lighter breakfast and dinner, hence my multiple snacks today.

Energy: Still struggling with low energy, probably from the gluten on Sunday. The reason why I think it’s the gluten still in my system? I have a few tiny bubbles under my skin on my hand still, and my skin was itchy yesterday.
