Those burnt ends from 4Rivers is on my mind! In the fridge from a chuck roast defrosting for tonight. I was able to find multiple recipes for “Poor Man’s Burnt Ends” on YouTube using chuck roast. But Poor Man, really? Chuck roast costs the same as brisket in my market! (I’m laughing inside.)

Meal 1 – Omelet with 6 oz ham steak + 1/4 cup cheddar cheese + 4 eggs scrambled

Snack – Korean jerkey + 1 string cheese + McDonald’s iced coffee (w/ just SF sweetner)

Meal 2 – Homemade burnt ends 1 pound

My burnt ends were a success flavor-wise, however not ingredient-wise. I thought I could substitute yellow mustard for dijon mustard, without any flavor impact. I was wrong. The amount of yellow mustard I used was very noticeable at 1st taste, so I added honey. Then at 2nd taste, the flavor just wasn’t good. So during the last 30 minutes of baking, I added BBQ sauce. That was NOT Carnivore, I know. But the flavor ended up tasting like a Kansas City BBQ as a honey mustard BBQ. My mother and family friend really enjoyed the taste and texture.

The pound of burnt ends, using chuck roast, was really satisfying. Kept me full for 5 hours easily.

Cravings: Craving for baked goods, but that craving was dismissed.

Energy: Slept well.

God, I am so glad that my performance on Carnivore does not dictate my rightness with you. I haven’t been doing this Carnivore thing perfect, but I know You are above all things, and You love me still.
