So much pork eaten today. Anyone with a Hispanic or Asian background will understand how infused pork is to our cuisine. If my Filipina mother was told she couldn’t eat pork anymore, I think she would freak out. So I’m keeping pork in our diet.

Meal 1 – Omelet with 5 scrambled eggs, 1/4 cup cheese and 1/4 cup real bacon bits

Snack – 1 serving cheese & 1 serving Korean pork jerky & large Coke Zero

This Korean jerky has sugar in it, which is totally against Carnivore rules. I let it slide. I figure that this jerky is a better option than gluten, refined carbs or desserts. Thankfully this jerky is now offered in 1.5 oz snack packs, because I used to eat an entire 5 ounces in a sitting.

Meal 2 – 1 lb pork belly

Normally I wouldn’t eat pork belly by itself, because it seem so fatty to me. However, I decided to try eating just pork belly to see how satisfied and full I felt. The piece I had was full of meat, with a thin layer of fat on top. About 1/4 cup of lard drained from the air fryer after my piece was complete. So yummy!

Cravings: When I see carbs or desserts, they look good right now. Not to the severity that I can’t resist, but I did have thoughts of cheating by eating a pastry. But I then reminded myself that I was in the grocery store without my snack, and a snack would have satisfied that craving.

Energy: Felt just fine when I woke up. Today was a chill day just wrapping up my week.

During dinner, my mother put on the movie about Ben Carson and his amazing story becoming the head of Neurosurgery for John Hopkins Hospital. God made our brains so complex and full of mystery, that I have no doubts regarding an intellegent Creator.
