Alfredo Chicken – Makes 2 generous servings.
- 2 pounds chicken breast
- 3 tbsp butter
- 3 oz Parmesan cheese, cut from block into cubes or shred
- 1 cup Greek Yogurt (low sugar)
- 1/3 cup cream cheese
- 1/4 cup water
- Garlic powder, salt and black pepper to taste
- Cut up chicken to cubes, about 1″ or smaller.
- Heat pan, and add 3 tbsp butter. (This amount of butter needed for chicken breast which has low fat content.)
- Cook chicken to desired level on all sides. Leave some liquid in the pan, about 1/2 cup.
- Add in parmesan cheese to begin melting, and mix in gently.
- Turn flame down to low before mixing in the other ingredients.
- Add in cream cheese and Greek yogurt. Add water until sauce is desired consistency. Stir until well incorporated.
- Add salt, pepper and garlic powder to desired flavor.
- Mix well, and enjoy.
Pork Belly
This video gave me the times and temperature to cook the pork belly. I did not do the overnight salt, and I also used different spices. My pork belly didn’t have the crispy top, because I’m using skinless pork belly. If you want the crispy top, buy pork belly with the skin still attached.
