Creamy Buffalo Garlic Chicken (Carnivore-Friendly) – Makes 1-2 servings.

  • 12 oz to 1 pound chicken breast
  • 3 tbsp butter
  • 1/4 cup Greek Yogurt (low sugar)
  • 4 tsp Frank’s Red Hot Sauce
  • 1/4 cup water
  • Garlic powder, salt and black pepper to taste
  1. Cut up chicken to cubes, about 1″ or smaller.
  2. Heat pan, and add 3 tbsp butter. (This amount of butter needed for chicken breast which has low fat content.)
  3. Cook chicken to desired level of browned on all sides.
  4. Take pan off the heat before mixing in the other ingredients.
  5. In a small mixing bowl, add Greek Yogurt with 2 tsp hot sauce and 1/8 cup of water. Taste to check flavor.
    • Add more hot sauce if not spicy enough.
    • Add a little more water if sauce is too thick.
    • Add garlic powder if desired.
  6. Pour sauce over chicken, and sauté until all chicken is covered with sauce.

Buffalo Chicken Pizza – Makes 1 serving.

  • 8 oz ground chicken
  • 3/4 cup mozzarella cheese
  • 1 egg
  • 1/2 cup Greek yogurt
  • Leftover buffalo creamy sauce
  • 1/4 cup bacon bits
  • 7 oz canned chicken
  1. Preheat oven to 400 Fahrenheit. Prepare baking sheet with parchment paper, and butter or grease lightly to keep pizza from sticking.
  2. In a mixing bowl, add ground chicken with 1/4 cup of mozzarella cheese, 1 egg and 1/2 cup Greek yogurt. Mix until fully incorporated. This is the pizza base or crust.
  3. Pour chicken mixture onto parchment paper. With a spatula or back of spoon, smooth out mixture until about 1/4″ thick. This will take a minute to avoid holes or large lumps.
  4. Place in oven, and bake for 20 minutes.
  5. In a separate bowl, mix canned chicken into leftover buffalo sauce. Add any seasonings you prefer.
  6. Once chicken crust is baked, pull out of oven. Spread buffalo chicken mixture evenly on top.
  7. Take remaining mozzarella cheese, and sprinkle evenly over the pizza.
  8. Next, spread the bacon bits over the pizza evenly.
  9. Bake in oven for 20 minutes, or until brown to your liking.
