Buon giorno! Glad to be here logging my days because I know I will appreciate having this record in the future. I recently read a journal I was required to keep while on a study abroad trip in college. Reading through it was so much fun. Memory lane had me back there thinking about the people I was with, the sites I enjoyed, remembering my favorites from the trip. So I’m motivated to keep this daily blog journal going.

Meal 1 – Omelet with 4 eggs and 1/4 cup cheddar cheese + 5 oz chuck roast

The best part of slow-cooking a chuck roast is leftovers! The chuck roast tasted just as good today with a quick reheat in the pan.

Snack – large Coke Zero

Meal 2 – 7 ounces of pork belly + 7 ounces of chicken breast (garlic powder seasoning)

After last week’s air-fried pork belly “steak”, my mother requested more pork belly. This time I tried the bites. They did not come out as well with the crispy fat. I will need to test more cooking times and temperatures to get the same type of crispy fat with soft meat.

Cravings: Today I finished the Coke Zero from last night, and I didn’t really care that I had any. Tomorrow I will go back to just having an unsweet black tea for my snacks.

Energy: Felt a little lack luster this morning due to my dogs waking me up in the middle of the night. However my sleep has been much more solid and deep when I am sleeping. I was alert once I actually stood up from bed, and started to move around.

Seriously I am so grateful to eat this meat and finally feel satisfied all night. Before I would eat a plate of 1/3 protein, 1/3 carb and 1/3 vegetables (ratios varied), and I was always ready to have a dessert or snack within 2 hours. Now I stay satiated and full so much longer, up to 6 hours+ without being ravenous for food. I’ve been able to cook meals without the hunger pangs. Yay for Carnivore!
