Cooking for two people, and wanting to cook extra portions for later….way more difficult than I anticipated! If my mother likes a dish, she calls “dibs” on the extra serving I set aside for later. Compliments to the chef, which is me. Just lessons to learn for this journey. I definitely want to avoid cooking every single day, unless I’m cooking something simple, like a steak.

Meal 1 – 7 oz uncured Polish sausage + 4 eggs (cooked in sausage fat)

While shopping at Costco this week, I grabbed an uncured Polish sausage without checking the ingredients. (Cue the terror music.) And guess what was in the sausage? Sugar. NOOOOOOOO. But yes…..sugar. Thankfully there was a minimal amount of 1 gram per ounce of meat. So I did eat 7 grams of sugar today.

Kielbasa is not even a craving I have (my mother cooked it 2x a week for a month in my teenage years). But my mom is truly the fan of Kielbasa, so I was focused on buying her an uncured option. The taste was a little sweet predictably, due to the sugar, but my mother’s cravings are now satisfied for a little while.

Snack – unsweet black tea + black tea sweetened with a splash of Stevia

Meal 2 – Cold leftovers with Carnivore Party dip (see Week 1 Recipes)

  • 3 oz Polish sausage
  • 6 oz Chicken breast
  • 2 slices of bacon or just over 2 oz
  • Added extra 1/4 cup of Cheddar cheese to the dip

The leftovers I had were eaten cold. Been cooking so much! Perhaps I could go get a fast food burger, but homemade burgers are just so much more juicy and delicious. I was so satisfied after this meal, and I will definitely repeat it.

Cravings: I really wanted a Coke Zero after thinking about going to a movie theater this weekend. I made the tea with stevia to help satisfy the craving.

Energy: Last night, I read a motivational book and then had a more intense prayer before bed. Both made me more wired than tired, so I couldn’t fall asleep until 4:30am. I definitely woke up sluggish, and have a slight energy slump around 1:30pm. Another slump around 4pm, but that may have been work avoidance. My goal is to improve my sleep with different types I’ve heard. See the video from Kerry at HomesteadHow below.

Even though I haven’t eaten strict Carnivore, a win I’ll take is the lack of extreme cravings. Small cravings that are easy to recover from, that is the best to be expected within the 1st week of a new “diet”. I am so glad that God loves me no matter my appearance, and that He really cares more about my heart for Him, my character and if I follow His way.
