• Buon giorno! Glad to be here logging my days because I know I will appreciate having this record in the future. I recently read a journal I was required to keep while on a study abroad trip in college. Reading through it was so much fun. Memory lane had me back there thinking about the people I was with, the sites I enjoyed, remembering my favorites from the trip. So I’m motivated to keep this daily blog journal going.

    Meal 1 – Omelet with 4 eggs and 1/4 cup cheddar cheese + 5 oz chuck roast

    The best part of slow-cooking a chuck roast is leftovers! The chuck roast tasted just as good today with a quick reheat in the pan.

    Snack – large Coke Zero

    Meal 2 – 7 ounces of pork belly + 7 ounces of chicken breast (garlic powder seasoning)

    After last week’s air-fried pork belly “steak”, my mother requested more pork belly. This time I tried the bites. They did not come out as well with the crispy fat. I will need to test more cooking times and temperatures to get the same type of crispy fat with soft meat.

    Cravings: Today I finished the Coke Zero from last night, and I didn’t really care that I had any. Tomorrow I will go back to just having an unsweet black tea for my snacks.

    Energy: Felt a little lack luster this morning due to my dogs waking me up in the middle of the night. However my sleep has been much more solid and deep when I am sleeping. I was alert once I actually stood up from bed, and started to move around.

    Seriously I am so grateful to eat this meat and finally feel satisfied all night. Before I would eat a plate of 1/3 protein, 1/3 carb and 1/3 vegetables (ratios varied), and I was always ready to have a dessert or snack within 2 hours. Now I stay satiated and full so much longer, up to 6 hours+ without being ravenous for food. I’ve been able to cook meals without the hunger pangs. Yay for Carnivore!

  • Never before have I been excited to weigh in after a week of a diet. Yet on Carnivore, I was already seeing a visual difference in my face before today. The first few weeks is usually water weight loss, from what other Carnivores have said. Even just lossing just water weight feels like a win.

    Weight: 283.8 pounds (-9.4 pounds)

    Meal 1 – Italian Egg Wraps (3 Egg Life wraps, 4 oz turkey deli meat, 1oz peppered salami slices, 1 slice cheddar, 1 slice provolone)

    My goal is to eat meals that are simple to prepare. I don’t want to spend my Sundays on complicated meals and a lot of dishes. Sunday is my Sabbath day, and I want to spend the day relaxing and dwelling on God.

    Snack – large Coke Zero

    Meal 2 – Miller’s Brunch Burger, modified (2 burger patties (added the extra patty), 2 slice provolone cheese, 1 slice bacon, 1 fried egg)

    After seeing the movie “I Can Only Imagine 2”, my friend and I decided to go eat at Miller’s Ale House. I’ve gone there before to try eating a Carnivore meal before starting the fast. The Brunch Burger is very filling with all the elements of a Carnivore meal. I ate a lighter meal for brunch, so that’s probably why I needed to eat more after I came home. Or the smell of chuck roast wafting through the house really called to me. You know, either of those options. 😉

    Snack – unsweet tea + 6oz chuck roast (with a few onions because of miscommunication with my mother)

    Cravings: Coke Zero at the movies, partially because I knew I would be thirsty at the movies. Paying $7 for a bottle of water isn’t cool to me. So I opted for a refillable cup for $1.50 more. I brought home a refill to enjoy tomorrow. I added extra ice to get a little less drink. I don’t plan to have Coke Zero for a few days or more after tomorrow.

    Energy: Slept well until I was woken up early, so then I slept in which isn’t great either. I would like to work on my Sunday routine, to improve how I spend the day. Felt mentally clear and awake for the rest of the day.

    I thank God that He doesn’t judge my loveliness by my body shape, but by my heart for Him. When days are tough, know that God just wants your heart.

  • Carnivore Party Dip – Makes 1 serving. Inspired by Low Carb Love recipe on YouTube.

    • 1/2 cup Greek Yogurt (low sugar)
    • 1/4 cup Cheddar Cheese, shredded
    • 1/4 cup Bacon Bits
    • Salt to taste
    • Optional – Dill Pickle seasoning to taste (not Carnivore)

    Mix until well incorporated. Enjoy!

    Carnivore Frittata – Makes 3 servings.

    • 1 pound of ground beef
    • 3/4 cup cheddar cheese
    • 9 slices of bacon
    • 9 eggs
    1. Preheat oven to 400° Fahrenheit, or follow other Frittata cooking temps. (I cook on higher temps sometimes.)
    2. Prepare by coating 8 x 12″ cooking dish with lard or butter.
    3. Cook ground beef to medium-well, and set aside to cool. Note: If you have cold ground beef in the fridge, add to the eggs now.
    4. Cook bacon to medium-well, and set aside on a paper plate lined with a paper towel to cool. If you overcook the bacon to extra crispy, the bacon could burn in the oven. To avoid this, you could add more eggs to cover all ingredients. Note: You can substitute pre-cooked bacon for this step to avoid the cooking.
    5. Crack eggs, and whisk until yoke and whites incorporated. Pour into creased baking dish.
    6. Add the cooled ground beef to the egg mixture, evenly distributing into the eggs.
    7. Take kitchen scissors, and cut 3 strips of bacon over each 1/3 of the baking dish. Continue with all the bacon.
    8. Sprinkle the cheddar cheese evenly over the dish.
    9. Using a utensil, gently press the ingredients down into the eggs. The eggs will rise during cooking, and any meat that is exposed will get crispier during cooking.
    10. Place in oven. Cook for 25 minutes, or until a knife comes out clean from the center.
  • I have a confession.

    The Coke Zero was calling my name, so I went to the gas station, and got one for myself. I did make 2 slight alternations to the amount I used to drink. I filled the cup with a little more ice, and didn’t fill the cup to the very top. To get the absolute most drink I could, I used to the the exact opposite. I was thinking that perhaps a smaller amount would be just as satisfying as my normal Large cup. Yes, I have always gotten the 32 oz size.

    If I decide to keep Coke Zero in my diet as a “treat”, the size will decrease. Let’s see if a 24 oz, then a 12 oz, will satisfy any craving I have in the future. Eventually I want to give up all the black tea and Coke Zero, unless perhaps I am going to a special occasion like vacation.

    Meal 1 – Omelet with 5 eggs, 1/4 cup bacon bits, 1/4 cup cheddar cheese

    In a hurry this morning, I wanted to whip up a meal that was fast. I don’t think this omelet even took 10 minutes from gathering the ingredients to being plated. While I don’t want to eat bacon bits every single day, they do help to satisfy my hunger while tasting delicious.

    Snack – large Coke Zero, unsweet black tea and 1 Kirkland’s meat stick

    Meal 2 – About 6 ounces of Pork Belly (weight after cooking) + 8 oz chicken breast (bit of Cajun seasoning)

    Cravings: Today was a hot day, and I think the Coke Zero seems so appealing because I get this from the gas station with ice. Ice keeps the drink cool, and seems special. I decided to buy ice trays today to test if the unsweet tea or water could feel just as enticing because of the cold ice cubes.

    Energy: Slept so well last night, I decided to sleep in another 2 hours! I didn’t make any of the changes from Kerry’s video, but my lack of sleep from the prior night really helped me fall asleep fast. No slump this afternoon as I went shopping, came home, and did some work.

    This is the end of the 1st week on Carnivore! Was I perfect? No. But I want to refine and get better with time. Thankfully every day starts new, and Jesus loves us. Thank you for reading along this week!

    Just a note on the variety of meals: I am currently cooking for myself and my mother. She loves food variety. Eating the same ingredients in the same exact way daily is considered boring for her. However, if I cook eggs in different ways with a different meat, she enjoys that the meals are visually “different”. Even if the meal equation (eggs + meat) is actually identical.

  • Cooking for two people, and wanting to cook extra portions for later….way more difficult than I anticipated! If my mother likes a dish, she calls “dibs” on the extra serving I set aside for later. Compliments to the chef, which is me. Just lessons to learn for this journey. I definitely want to avoid cooking every single day, unless I’m cooking something simple, like a steak.

    Meal 1 – 7 oz uncured Polish sausage + 4 eggs (cooked in sausage fat)

    While shopping at Costco this week, I grabbed an uncured Polish sausage without checking the ingredients. (Cue the terror music.) And guess what was in the sausage? Sugar. NOOOOOOOO. But yes…..sugar. Thankfully there was a minimal amount of 1 gram per ounce of meat. So I did eat 7 grams of sugar today.

    Kielbasa is not even a craving I have (my mother cooked it 2x a week for a month in my teenage years). But my mom is truly the fan of Kielbasa, so I was focused on buying her an uncured option. The taste was a little sweet predictably, due to the sugar, but my mother’s cravings are now satisfied for a little while.

    Snack – unsweet black tea + black tea sweetened with a splash of Stevia

    Meal 2 – Cold leftovers with Carnivore Party dip (see Week 1 Recipes)

    • 3 oz Polish sausage
    • 6 oz Chicken breast
    • 2 slices of bacon or just over 2 oz
    • Added extra 1/4 cup of Cheddar cheese to the dip

    The leftovers I had were eaten cold. Been cooking so much! Perhaps I could go get a fast food burger, but homemade burgers are just so much more juicy and delicious. I was so satisfied after this meal, and I will definitely repeat it.

    Cravings: I really wanted a Coke Zero after thinking about going to a movie theater this weekend. I made the tea with stevia to help satisfy the craving.

    Energy: Last night, I read a motivational book and then had a more intense prayer before bed. Both made me more wired than tired, so I couldn’t fall asleep until 4:30am. I definitely woke up sluggish, and have a slight energy slump around 1:30pm. Another slump around 4pm, but that may have been work avoidance. My goal is to improve my sleep with different types I’ve heard. See the video from Kerry at HomesteadHow below.

    Even though I haven’t eaten strict Carnivore, a win I’ll take is the lack of extreme cravings. Small cravings that are easy to recover from, that is the best to be expected within the 1st week of a new “diet”. I am so glad that God loves me no matter my appearance, and that He really cares more about my heart for Him, my character and if I follow His way.

  • ** Please feel free to pray this over yourself. God hears you when you call. **

    Dear God,

    Thank You for being a big God. A powerful, omniscient, omnipresent God. The one true God.

    God, please help me see where I am sinning against Your ways. Please forgive me for the sins I have committed against You today, and yesterday. I don’t want to live that way. I don’t want to grieve You with my sin. I want to do, say, think, desire, all that is good in Your sight.

    Lord, the Bible says that with You, all things are possible. God, You see how many times I have tried and tried to control my diet, to control the food and the quantity of food I put in my mouth. You saw when I wasn’t feeling full, still felt hungry, was overcome with cravings, couldn’t stop the overwhelming need to feed on all that processed junk food I ate.

    God, You saw when I was overeating due to my emotions, or when I overate to celebrate, or when I overate to feel full and “satisfied”. But You know when I was doing it willfully from gluttony, and when I just ate because I couldn’t satisfy a need that only You can fill.

    Lord, I believe You led me to the Carnivore diet. You heard my desperate prayers. My prayers filled with tears, with self-hatred and self-disgust. And You know how much I wanted to live life with more energy, more joy, with so much more gratitude and hope for the future than I was living in that moment. You saw my depression, my fear of the future, my lack of discipline, my lack of energy, my lack of direction, my hopelessness and my shame. God, You saw my heart to do more, to do good things in Your eyes, to live a life with joy, with a desire to do good things for Your kingdom here on earth.

    Lord, I know You can do all things. But I feel powerless to do this on my own. Lord, I believe this diet will help my energy, help my mind feel more awake, help my skin issues, help my inflammation, help me manage my weight, help me manage my appetite so that I finally feel satisfied and sustained with my meals. God, I am placing my entire Carnivore experience in Your hands. You made all these foods, and I want You help. I need Your help.

    God, I know You are always near, and I am so grateful I can talk to You when I struggle. I’m grateful that You are so mighty and amazing, that You hear us all, all Your children. God, thank You for loving me first before I chose to love You back. Thank You for loving me even in my sinfulness, in my doubt, in my shame, in my fears. Thank You for drawing me back to You. I trust You with my life, and I give everything over to You. You are my Father, my Protector, my Guide, my Rock, my Shield, the Hands that hold me.

    Thank You, God, for being with me in everything that I do. I am grateful for You. I am so glad that You are with me. I pray all this in Your name. Amen.

  • Bonjour, everyone. Well….today I tried a dirty coffee, and immediately I had some feelings (laughing). Probably should avoid it altogether in future, or remove the fake sweetner. Fake sweetner isn’t included on Carnivore, nor is it recommended. Some other Carnivores report that fake sweetener trigger their cravings for processed foods. Learning lessons.

    Meal 1 – Meat Frittata made the other night (1/3 lb ground beef, 3.4oz bacon, 1/3 cup cheddar cheese and just under 3 eggs) + McDonald’s large iced coffee with sugar-free French Vanilla

    Yes, yes, I drank a processed iced coffee full of garbage while on Carnivore. I was up earlier than normal to do a favor, and I requested this coffee in return. Afterwards, I had minor stomach pain, and I’m not sure if the culprit is the coffee. This meal also was not filling…..or the fake sweetner triggered a hunger signal. Based on the ingredients, this meal should have been filling by itself (without the coffee). I will retest this dish, without the cheese, and with a couple additional eggs. No coffee next time!

    Snack – 2 servings string cheese and unsweet black tea

    Meal 2 – 1 pound of chicken breast cooked in 1 tbsp. butter + Carnivore Party Dip

    • 1/2 cup Greek Yogurt (low sugar)
    • 1/4 cup Cheddar Cheese, shredded
    • 1/4 cup Bacon Bits

    Chicken breast hasn’t satisfied my hunger in the past when I ate it solo as a meal. So I decided to try this dip to add more fat, in hopes I would feel satiated. Boy, did it work! Every bit of this dip was gone, and I have added this to my Repeat list. In the future, I’ll try less cheese and less bacon because this dip was FULL of flavor. Delicious, but I technically didn’t “need” all of it. (As I’m proofreading this post at 9:40pm at night, I think the amount of fat was just right to keep me satisfied. I am slightly hungry, but I will drink water for the rest of the night.)

    Cravings: After the coffee, I was still hungry, but surprisingly I had no specific cravings for anything. All I wanted was more of my breakfast. Small win!

    Energy: Woke up WITHOUT the “ugh” feeling for the first time since starting Carnivore! I definitely prefer this clear and bright feeling in the morning. Who wouldn’t??? And no afternoon slump.

    Today felt really good. You ever have days like that, where you just thank the Lord for it? Happy little dance.

  • Good morning, friends! Today is a sunny day, and I’m so glad to be up and about doing my Carnivore thing. So far, it looks like I’m not hungry immediately when I wake up. But today, I actually was hungry about 30 minutes after waking. Watching how this trend goes!

    Meal 1 – Ribeye omelet with cheese (4 eggs, 1/2 cup cheddar cheese + 6 ounces ribeye)

    This was a fancy omelet, if I do say so myself! Very delicious, and I will be trying this with all the meats eventually.

    Snack – Unsweet black tea

    Meal 2 – Pork loin 2/3 pound (my mother dropped hers, so I gave her a part of my meal) + two servings of mozzarella string cheese

    Snack – 4 pieces of bacon (just under 1/3 lb)

    Still hungry after dinner a couple hours later, I tried the “cold bacon” trick. Delicious, and helped me get to bed without hunger pangs.

    Cravings: The cravings, or “food noise” as it’s also called, has not completely stopped. On my phone or watching TV, there is always some gluten and sugar-filled food that I have to scroll past. Desserts are the ones that still look decadent and delicious. Yesterday I also noticed that my thought patterns were about the future “after Carnivore”, like I had hopes to incorporate other foods later on.

    On YouTube, I’ve watched carnivores who are a couple years or more into the diet. Some up to 13 years, like Kelly Hogan of MyZeroCarbLife. More than a few of these people have added non-Carnivore things into their diet. Their new diet isn’t really Ketovore if they add fruit, nor Whole Foods if they add processed sugar. Because these various Carnivores experienced significant healing and weight loss, they are at the place where they can experiment with addings foods back into their diet.

    However I am not there, so my thoughts are back to where I am currently, the present. I’m committed to Carnivore to see how much I can improve in how I think and feel and weigh! Back to my present journey.

    Energy: I still woke up feeling sluggish, and initially wanted to go back to bed. One of my dogs wanted attention twice during the night, but I did sleep deeper than normal. Bit of a 4pm slump with the heat, but I drank my tea and had more water. Felt better around 6pm.

  • From now on, I’ll be posting my day the “next day” to ensure I capture all my snacks and feelings. I’m sure I am not the only one who can go from feeling fine, to struggling with cravings, to feeling blah or fantastic, all in the same day. So, I’ll be treating each post as a journal entry!

    Woke up and wanted to do chores and work for about 1 hour before eating.

    Meal 1 – Repeat of yesterday (bacon and eggs) with an unsweet black tea

    Snack – Two servings of string cheese mozzarella

    Today I was hungry 3 hours after my 1st meal. This is different from yesterday, so we’ll see how this trend goes. After fasting, I am satisfied on smaller meals, and stay full longer. Even though I’m not officially tracking my calories, I believe yesterday was around 2,000 calories. After today is over, we’ll see if it was any different.

    Meal 2 – Ribeye steak, about 1 pound cooked (set aside additional 6 ounces for tomorrow)

    This ribeye was definitely a splurge, but I wanted to celebrate the beginning of my Carnivore journey with a great steak! I ended up eating this steak about 2.5 hours after my snack. Honestly, I was worried that the ribeye wouldn’t hold me all night, and that I’d need a snack later. But steak is my friend, and I was satisfied the rest of the night for 8 hours. And I didn’t go to bed hungry, which is awesome.

    Energy: Today, I felt really good. No afternoon slump, no headache. I still woke up feeling sluggish, and initially wanted to go back to bed. However, once I got going on chores, I felt good.

    Batch Cooking – To save time on future meals, I decided to try batch cooking a frittata. On hand, I only had enough eggs to make 3 servings. But cooking larger batches would save me time throughout the week for my 1st meal. Sometimes I’m on the go or want to leave early, so having a meal that is easy to heat and take in a container will be helpful.

    • Carnivore Frittata – Each portion will have 1/3 pound of ground beef, 1/4 cup cheddar cheese, 3 slices of bacon and just under 3 eggs.
