• Happy St. Patrick’s Day to all who want to be Irish today! No green foods on Carnivore, but I shall have a glorious day with the great weather we are having.

    Snack – 2 servings string cheese w/ half- SF electrolyte water

    Meal 1 – Restaurant 10oz burger with 2 slice swiss cheese and 4 slices bacon + 3 oz steak wrapped in bacon + about 7 pickle slices + Coke Zero

    Why did I have pickles? While watching an interview with a lady that eats “primal”, and others who eat similar, fermented foods were mentioned as part of the diet. With fermentation, the oxalates are supposedly broken down.

    I did research if store-bought pickles have oxalates, and there is barely 1mg per entire pickle. However, the store-bought versions also aren’t truly fermented therefore lacking the probiotics I thought they might provide. Oh well! Not the best, but not the worst. I probably won’t eat pickles again after this research.

    Meal 2 – 10 oz sliced pork belly “bacon” + 2 servings string cheese

    This dinner wasn’t what I originally had planned, but we had a hearty lunch. Just so we weren’t eating too late at night, I made lighter meals for dinner.

    Cravings: No specific cravings today. I got Coke Zero just because the opportunity was presented by eating at a restaurant. Just a reminder, I drink the Coke Zero to avoid caffeine withdrawals.

    Energy: Slept well, even though interrupted twice by dogs. Energy was very good today.

  • Because I ate breakfast at the hotel before heading back home, I delayed the weigh-in until today, Monday the 16th. Normally I would hesitate to weigh after a trip, because I would have gorged myself to the point I gained weight. While I did eat a copious amount of food at the buffet, I decided to have no fear weighing myself this morning.

    Weight: 279.8 pounds

    • This week -4 pounds
    • Total -13.4 pounds
    • Starting weight 293.2

    While this week was not as amazing a loss as week 1, I’m still happy with the result. I ate lots of food on Saturday and Sunday, along with plenty of snacks and cheese this week. These results are to be expected. I also didn’t desire lossing weight super fast, because I wanted any loose skin to hopefully draw in and adjust naturally.

    Meal 1 – Ground pork 8 oz + 4 oz ground chicken + 4 scrambled eggs

    Snack – sugar-free electrolyte in water + unsweet tea w/ stevia

    Meal 2 – Sirloin steak 1 lb cooked in 1 tbsp butter

    Snack – 2 servings pork rinds + 1 serving meat sticks + 1 serving cheese

    My 3rd day wanting more food than the past 2 weeks. Soon, a fasting day may be needed to help shrink my desire to eat. Have you ever noticed that you can’t eat as much after a 24 hour fast? My capacity to eat lowers after fasting.

    Cravings: Today I wanted a Coke Zero, but it wasn’t available. I got an unsweet tea instead, but all is well.

    Energy: Slept well, which I’m grateful for every day I can! Energy sustained all day.

    When I feel overwhelmed, I talk to God, and recommit my faith to Him in each situation. I trust in God in all things. He’s there for you in difficult times too!

  • Awwww, man!!!!! Time to go home. I had a great time with my sister, and was so happy to see her two dogs too. Since my sister had a 4 hour drive ahead of her, we decided to eat breakfast, and head out early. But first, we’ll take advantage of the breakfast included in the hotel price.

    Meal 1 – Hotel 2 eggs with 2 servings breakfast sausage and 1 serving sausage patties

    Snack – large McDonald’s iced black coffee with sugar-free French Vanilla

    Because the the stomach ache I had earlier this month when drinking McDonald’s iced coffee, I decided to remove the “cream” this time. I grabbed the traditional one for my mother (she loves it), and then the modified one for me. It was great, and no stomach repercussions! And my mother enjoyed her surprise coffee.

    Meal 2 – Burgers 1 pound + 1/4 lb Costco hot dog + 2 slices of cheddar cheese

    Snack – 4 serving string cheese + 2 servings pork rinds

    Not sure if I wanted to bigger snack because of my lighter breakfast? My dinner was more than usual, but I’ll be watching for any trends.

    Cravings: Coke Zero was knocked out with a sugar-free electrolyte water.

    Energy: Woke up before my phone alarm, even though I didn’t sleep “perfect” on the firmer mattress at the hotel. I did take a nap in the afternoon with the sounds of rain and thunder lulling me into relaxation. Great energy otherwise.

    Very grateful for today, getting home with plenty of time to go to the last service at church. Takeaway from the sermon: Look at my own sins, and make right with God, before I look at others’ sins.

  • Occasionally I may miss updating the grocery list. Please don’t forget to use what you already have to make meals, so ingredients don’t go to waste. Tip: I buy bigger packs of meat, split them up into 2 or 4 servings, then freeze the extras I don’t need this week.

    This week, I’ve gone to multiple restaurants with my friend and sister. Would it be best to add those ingredients to the grocery list in order to replicate the meal? Or leave it off?

    Of the 2 weeks so far, this is the most food I’ve eaten out, and my grocery list looks crazy long! So glad I can buy in bulk, and freeze meat to enjoy the next week. Normally I’d duplicate meals 2x, which would make my list shorter. At least this gives you a variety of meal ideas, right?

  • When my sister and I go on road trips, we enjoy visiting different thrift stores to find the unusual. So today was no different. We went to a vintage/antique show first, and then multiple thrift stores. Very glad we had a hearty breakfast with my sister’s best friend before heading out to the stores.

    Meal 1 – 3 eggs with 4 servings breakfast sausage and 6 slices of bacon

    Snack -medium black tea with sweetener, 2 servings pork rinds, 1 serving meat sticks

    Meal 2 – Fried chicken without the skins or all the fried bits (2 chicken breast on bone), 1 baked chicken drumstick, 1 oz roast beef, 7 smoked pork ribs

    Soooooo….we went to my favorite country buffet near our hotel. I used to live close to this buffet, and would eat there weekly. I knew the restaurant offered plenty of animal-protein options. No regrets leaving very full with easily 2 pounds of meat in my tummy. I’d also like to add that even though the buffet was full of items I used to love with all the carbs, sugar and fried bits, it was easy to say “no”. I went directly to the meaty goodness they offered.

    Cravings: At the vintage show, there was 1 vendor with a couple baked goods. In the past, I definitely would have bought one or two to enjoy. However, I had no problem walking away from it. I just looked forward to an icy beverage after walking around the show.

    Energy: Did not sleep well, but energy was great during the day with the multiple stops and walking around at stores.

    This road trip has gone well with the food availability, and I haven’t had to rely on burgers as my meals. So grateful for the food variety. May you have a restful night before church tomorrow. God bless you, your family, your friends, your workplace, your home and your church.

  • Creamy Buffalo Garlic Chicken (Carnivore-Friendly) – Makes 1-2 servings.

    • 12 oz to 1 pound chicken breast
    • 3 tbsp butter
    • 1/4 cup Greek Yogurt (low sugar)
    • 4 tsp Frank’s Red Hot Sauce
    • 1/4 cup water
    • Garlic powder, salt and black pepper to taste
    1. Cut up chicken to cubes, about 1″ or smaller.
    2. Heat pan, and add 3 tbsp butter. (This amount of butter needed for chicken breast which has low fat content.)
    3. Cook chicken to desired level of browned on all sides.
    4. Take pan off the heat before mixing in the other ingredients.
    5. In a small mixing bowl, add Greek Yogurt with 2 tsp hot sauce and 1/8 cup of water. Taste to check flavor.
      • Add more hot sauce if not spicy enough.
      • Add a little more water if sauce is too thick.
      • Add garlic powder if desired.
    6. Pour sauce over chicken, and sauté until all chicken is covered with sauce.

    Buffalo Chicken Pizza – Makes 1 serving.

    • 8 oz ground chicken
    • 3/4 cup mozzarella cheese
    • 1 egg
    • 1/2 cup Greek yogurt
    • Leftover buffalo creamy sauce
    • 1/4 cup bacon bits
    • 7 oz canned chicken
    1. Preheat oven to 400 Fahrenheit. Prepare baking sheet with parchment paper, and butter or grease lightly to keep pizza from sticking.
    2. In a mixing bowl, add ground chicken with 1/4 cup of mozzarella cheese, 1 egg and 1/2 cup Greek yogurt. Mix until fully incorporated. This is the pizza base or crust.
    3. Pour chicken mixture onto parchment paper. With a spatula or back of spoon, smooth out mixture until about 1/4″ thick. This will take a minute to avoid holes or large lumps.
    4. Place in oven, and bake for 20 minutes.
    5. In a separate bowl, mix canned chicken into leftover buffalo sauce. Add any seasonings you prefer.
    6. Once chicken crust is baked, pull out of oven. Spread buffalo chicken mixture evenly on top.
    7. Take remaining mozzarella cheese, and sprinkle evenly over the pizza.
    8. Next, spread the bacon bits over the pizza evenly.
    9. Bake in oven for 20 minutes, or until brown to your liking.

  • Time to hit the road to meet my sister for the weekend! Around 2013, we started a tradition of doing annual road trips together. Now that we live closer together, we can just meet up randomly throughout the year. This is my first trip on Carnivore, so I am curious how my meals will go.

    Meal 1 – 4 eggs with 10 oz steak (tried mock tender steak for the 1st time)

    Snack – sugar-free flavored electrolyte in water + 2 jalapeno/cheese sausages

    Meal 2 – Honduran meal (2 eggs, 4 oz steak, 1 oz fresh cheese, about tbsp Honduran crema (like a sour cream/mayo)

    When the server brought over chips and salsa, I easily slid it towards my sister . I didn’t have any particular craving for it, and my sister even offered me the salsa for my meal. Very cool to be avoiding these foods without fighting my desires because I didn’t have a desire for them.

    Snack – medium Coke Zero + 2 mini meat stocks + 1 serving cheese + pc of jerky + 2 servings pork rinds

    Cravings: The Coke Zero wasn’t a craving today, but I had a minor headache. The caffeine fixed me up immediately. I ate so much for a 2nd snack, that it looks like I was having cravings. But really, my dinner was only around 7 to 8 ounces, so I needed for more food. Everything I tried was new to me. The jerky does have some sugar in it, so I’m only eating a couple pieces of a time.

    Energy: Did not sleep well, but that probably was due to excitement. Usually the night before a trip is restless because I love going on road trips. Energy was just fine all day!

  • Oh happy day to enjoy more Carnivore foods. Still having the “hungover” feeling after being woke up early by the dogs, and going back to bed for a couple hours until my alarm sets off. Perhaps I should just stay awake when I get up for the dogs.

    Meal 1 – 4 eggs with 12 oz uncured Polish sausage

    Snack – sugar-free flavored electrolyte in water

    Just to test if a flavor would cause cravings, I grabbed some sugar-free electrolytes in 4 flavors. On strict Carnivore, this isn’t considered “clean”. In my mind, the ingredients are probably a lot better than a Coke Zero. Hopefully this can replace my Coke Zero desire, and will taste as satisfying in ice water. So far I’m really enjoying the Raspberry Lemonade, and used about 1/3 of a packet in 20 oz of water.

    Meal 2 – Carnivore Buffalo Chicken Pizza (8 oz ground chicken, 3/4 cup mozzarella cheese, 1 egg, 1/2 cup Greek yogurt, buffalo creamy sauce, 1/4 cup bacon bits, 7 oz canned chicken)

    Cravings: Coke Zero but the electrolyte water seems like a yummy replacement.

    Energy: Feeling just fine after waking up.

    Today was a chill day, going through the flow. Thankful for today. Just remember, Jesus loves us no matter we look like.

  • (Sigh of relief) Finally a meal is repeating, where I don’t have to do any fancy cooking or dishes. So that I could use up ingredients, I’m repeating the Italian egg wraps for breakfast. Also I woke up later than I intended, so quick meal it is!

    Meal 1 – Italian Egg Wraps (3 Egg Life wraps, 4 oz turkey deli meat, 1 oz+ peppered salami slices, 2 slice provolone)

    After I ate, my mother came home with a Filipino dessert. In the past, I could have eaten all 3 buns, and then more. But that dessert just looked like Carnivore destruction to me. I rather stay the course on Carnivore, than ruin my results with a temporary dessert.

    Snack – large Coke Zero (more ice, not filled to top like my old ways)

    Meal 2 – Top Sirloin steak 1 pound, cooked in 1 tbsp butter

    Cooking steak is so easy and uncomplicated. Apparently I made the steak well, because my mother declared “I could eat steak every day.” I agree, I could also eat steak daily.

    Snack – Italian Roll-Up (4 oz turkey deli meat, 1 oz peppered salami slices, 1 slice provolone) + 2 string cheese

    Later at night, I had a hearty snack. I don’t always need this much food at night, but I wonder if it’s because my breakfast wasn’t as filling? Something to watch.

    Cravings: Because I was running an errand, I decided to grab an icy Coke Zero. I’d like to wean myself off this drink over time. In my old way of eating, if I had a craving and I didn’t give in to it, I would just go off the rails eating so much other junk. And even after I ate all those other calories, my original craving still existed. Therefore if the only thing I’m craving now is Coke Zero, I’ll grab one. I don’t want to make this a daily habit, nor keep buying a large size every time.

    Energy: Slept so well, that I overslept after being woke up too early. I had climbed back into bed, and I really passed out for a couple more hours. Oops, but all good!

    Grateful to God for this eating plan, because I was able to look at pastries for the 1st time without desire. Yay!

  • Restaurant manager – “The chicken is about to expire. Push the chicken special tonight.”

    Normally I wouldn’t eat this quantity of chicken every single day. Ruminate meat like lamb and beef are better for us (based on nutrient profiles), but I didn’t freeze the large pack of chicken I purchased. To be honest, I wasn’t sure how much we would eat, nor in what order. With my mom always craving variety, I must attempt to work around that while using up our meats.

    Meal 1 – Omelet with 4 eggs + 1/4 cup bacon bits + 4 oz chicken breast

    Snack – unsweet black tea

    Meal 2 – Creamy Buffalo Chicken (12 oz chicken, 1/4 cup Greek yogurt + 4 tsp of Frank’s Red Hot sauce) + 3 oz chuck roast

    Snack – 2 servings string cheese + 1 oz hard parmesan cheese

    Oh my goodness! This buffalo sauce has absolutely satisfied my desire to get buffalo wings. I even had extra sauce available to use for a Carnivore pizza this week. Perfect for a party food, and could use it to make a Carnivore Buffalo Chicken Dip. I think I needed more meat, because I needed a snack before bed.

    Cravings: While I was out doing an errand, I did think about going to get a Coke Zero. In March, it’s already hot outside, and that ice is so nice. However, I just headed home, and haven’t thought about Coke Zero since then.

    Energy: Last night, I slept so well. I think I slept too well because my bed seems too inviting right now. Energy was just fine for the rest of the day.

    Carnivore might be catching on to those around me! A good friend of mine has been testing out Carnivore and high protein meals. She’s already lost a couple pounds after stalling for a few months. This is awesome! Thank you, God!
